From the chef’s kitchen
With roasted duck foie gras, ginger, apple, almonds and raspberry vinegar.
Sterling Silver beef, caramelized onion, aioli and red wine reduction. Also available with duck foie gras.

Born in Paris to a French mother and a Vietnamese father, Erik Nguyen blends the class and elegance of French cuisine with the complexity of Vietnamese cooking, and even ventures into molecular gastronomy.
With a long career in restaurants and as a private chef around the world, he now puts his creativity to the test at Tony’s Bistro in Acapulco.
